Fennel and Apple Salad


This was my first time ever using fresh fennel.. YUMMY.

I love fennel for its mild and liquorice flavour, but usually only drink the tea or in indian spiced dishes. I finally got sick and tired of living my life without the fresh stuff, so I added it in to a salad I was making with no regrets! It was super yummy and added a nice sweet "surprise!" of liquorice to the salad.

This recipe is really easy to make, and you can chomp it down quite fast too. I ate this as a quick lunch before I went to work, but think it would work great as an appetizer or side dish to a summer pesto pasta.

Ingredients:

Salad:
1 small head of romaine lettuce, chopped
1/2 apple, diced.
1/2 head of fennel, diced into large pieces. 
1/2 cucumber, cut into half moons

Dressing:
2 TBSP olive oil
1/3 of a lemon, freshly squeezed
Pepper to taste

Directions:

Chop it all up and throw it into a bowl! That's it thats all!
Enjoy :)





Aaaaand then I got too happy and it went all over myself, and my balcony. Woops..
Like mother like daughter!
