Simple Coconut Loaf


This is a loaf that is suitable for those on a paleo diet, as well as on the candida/parasite cleansing diet! It is super high in protein to make us strong like bull, and probably packs about 22 grams of fiber in 1/4 cup of coconut flour. Since this recipe uses 3/4 C of flour, and makes roughly 8 decently sized slices, that's roughly 8.25 grams of fiber per slice.. Now if you ask me, that's a tasty slice of goodness that will encourage a good poop! What about the fat? Fat shmat. When it comes to this fat anyways! The fat that occurs from coconuts is healthy. Coconut Loaf



Ingredients:

3/4 C coconut flour (organic)
5 eggs
1/2 C coconut oil
1/4 C - 1/2 C xylitol (your choice)
1/2 tsp salt
1/2 tsp cinnamon for sprinkling on top

Directions:

Preheat the oven to 350° and line a small loaf pan with parchment paper (or coconut oil).

In a medium sized mixing bowl, combine the coconut flour, xylitol, and salt. Gently whisk out the clumps if there are any. 

In a small bowl, crack the eggs and whisk them together. Add coconut oil.  Have a little fun, get a little angry, whatever you do, whisk them well!! 

Add the eggs into the dry ingredient bowl and still using the whisk, make sure it is all blended perfectly and that there are no clumps left. The batter will be like a really wet cookie dough, and thats okay! Coconut flour is weird, and that's usually how the batter turns out. 

Pour the batter into the small loaf pan (make sure that it is either lined with parchment paper, or greased up). Sprinkle the cinnamon on top (use a little more if you're like me and cant get enough cinnamon). Then take a spoon and gently rub it in and swirl it around a little bit.

Bake for 25-27 minutes.

Now here comes the hardest part: waiting for it to cool before you slice it up. I've always been terrible at this part. And now that I'm detoxing from sugar, it's harder than ever because I know something that tastes like it should be bad for me is RIGHT in front of my eyes!!!!! Aaaaaah!! If you can't tell, i'm writing this as I wait for it to cool down. So please excuse me hahaha
