Chocolate-Peppermint Oatmeal

This oatmeal tastes like After-Eight *drools*

I used to eat a whole box of those in one sitting as a kid. Chocolate, and peppermint go together so well!

Today, I don't eat a whole box of After-Eights like I used to (but to be truthful, I still get the urge haha), I make this oatmeal for breakfast instead! It satisfies my chocolate and peppermint craving and fills my tummy up, giving me energy to conquer the day. I think that's a pretty good swap, don't you?

Chocolate-Peppermint Oatmeal


Ingredients:

1 C water
1/2 C rolled oats (gluten free)
1 tsp cocoa powder
1/2 tsp peppermint extract
1 tbsp coconut oil
1 date, pit removed and chopped into pieces (optional)
1/2 tbsp ground flax
1 tbsp chia seeds (I used Chia Goodness, which is a blend of chia, buckwheat, and hemp)
1 tbsp unsweetened coconut flakes
1/4 C milk (of choice)

Directions:

Bring the water to a boil in a small saucepan. 

Add the oats when the water is boiling, then reduce heat to medium.

Add in the cocoa powder, peppermint extract, coconut oil, and date if you're using.

Let cook for 5 minutes, giving it a quick stir each minute. 

When the oatmeal is soft, remove from heat.

Fold in the ground flax, chia seeds, and unsweetened coconut. Let sit for 1 minute.

Put the oatmeal in your favourite bowl and pour the mil over top.

Serves one.
