Okay so this pudding isn't just ANY chocolate pudding...
It's actually chocolate avocado pudding!!
This is so amazing on many different levels. Trust me on this!
I bet that if you put this pudding in front of a diehard chocolate lover, who hates "healthy" foods, they wouldn't know the difference. It's very rich and satisfying to anyone with a sweet tooth because.. well.. it's chocolate! (duh!)
Here's a little something something about avocados:
• They are an excellent source of vitamin E
• Contain B-vitamins
• Are a source of folic acid
• They are filled with healthy fats (monounsaturated)
• In one little avocado, there is more than twice the amount of potassium than a banana!
This recipe will NOT disappoint, I promise.
Chocolate Avocado Pudding
4 tbsps cocoa powder
2-3 tbsp raw honey (you can also use stevia as a substitute)
(I added in the 1 tsp maca and 2 tbsps chaga powder. The flavours were completely hidden so my roommate had no idea!)
Cut open the avocado and remove the pit.
Scoop out the avocado and put into the food processor.
Add in the cocoa powder, honey (or stevia) and your add-ins if you're using any.
Blend until smooth!
Serve with your choice of garnish (I sprinkled hemp seeds and finished with some raspberries).
Recipe makes about 2-4 servings.
** To cut open an avocado: Hold the avocado in your hand lengthwise or on a cutting board. With a knife (preferably a chefs knife), cut through the hard skin until the knife comes into contact with the pit. Without removing the knife, make a continuous slice around the pit until the knife meets with the initial cut point. Give it a twist and pull! Scoop out the pit and toss in garbage.
Tip: If you're not planning on eating all of the pudding (or anything which avocados are the main ingredient), save the pit and store it with the food. This will slow down the time it turns brown!
