Gluten Free Waffles (with a banana twist)

This is a classic waffle recipe but with a fruity twist..

 A fruity twist of sweet banana, and crispy waffle. 


Here's the story: So the other day I really wanted waffles, but didn't have any butter on hand, AND I was running low on coconut oil... (Uh oh.. Getting low on coconut oil is a sign that I NEED to make a trip to the grocery store like, NOW!). But in many baking recipes, you can often substitute banana 1:1 for butter/oil. So that's exactly what I did. Simple as that! I sure am I happy that I did too because it was the a perfect breakfast, and perfect waffle.

I'll stop babbling. Here's the recipe:

Gluten Free Waffles


1 1/2 C quinoa flour
1/2 C organic cornstarch
1 tbsp baking powder
1 tsp salt
3 eggs
1 3/4 C almond milk 
1 tsp vanilla extract
1/2 C mashed banana (or butter/coconut oil if you don'y have any bananas on hand)


Get out your waffle maker, and preheat. 
**Become friends with your waffle maker and get to know it's groove. Depending on how dark you want your waffles to be, will depend on how hot you make your maker. Therefore, it may take some trial and error to find your perfect heat setting. 

Preheat oven to 200° 

In a large bowl, whisk together flour, corn starch, baking powder and salt. Stir together.

In a separate mixing bowl, whisk the eggs, almond milk and vanilla extract together. Stir in the mashed banana and whisk until blended thoroughly. Combine with dry ingredient bowl and mix well.

Grease your waffle maker with coconut oil and spread around.

Add the batter to your waffle maker and spread around evenly. 

Cook waffles as directed by the instruction manual for the waffle maker. 

Store the cooked waffles in the preheated oven while waiting for the rest to be cooked.

Top with cut bananas, and strawberries.

Eat while in the company of your family :)
