Goji Lemon Balls


At first, I didn't know what to call these... Goji power balls, Goji balance balls, Goji energy balls.....

In the end, I settled for Goji Lemon Balls because nutrition nerd aside, this is what they are! 

These balls are packed with protein, MCT's (Medium Chain Triglycerides), Omega-3, fiber, and antioxidants. While I'm on topic..... Here are a few pointers of some key ingredients:

Goji Berries: Loaded with antioxidants! They're pretty low in sugar for being a dried berry, and have been used in Traditional Chinese Medicine for hundreds of years. They are loaded with vitamin C, and there are 21 trace minerals in those little dried berries! No doubt goji berries are a nutritional power house. 

Medjool Dates: More than just a dried fruit, these delicious little guys are commonly used to sweeten foods (which they do a great job at might I add), but they also have the mineral selenium in them, which acts as an antioxidant. Dates are also rich in iron too!

Coconut Flour: My fave. Full of fiber, MCT's, and protein. Keeps you full, not bloated, feeds your muscles, is gluten free and delicious.

Coconut Oil: You can read all about the benefits of coconut oil and why I eat it off the spoon here. Long story short, keeps your skin and hair radiant, gives you energy, and lubricates your entire body. I definitely recommend you click that link though and get your butt over to that page to learn all about coconut oil!

Omegalicious Omega 3: Molecularly distilled and pharmaceutical grade fish oil that I swear tastes nothing of fish (crazy, right?). Botanica uses a patented process to emulsify molecularly distilled fish oil leaving it with a creamy texture. Emulsification also helps to maximize absorption and improve the digestion of omega 3's in the body, so it's a win win! Omega 3's help with a TON of bodily functions, but to name a few, they help to keep the body lubricated, reduce inflammation, helps brain development, and keeps your heart healthy.

Goji Lemon Balls


Ingredients:

1/2 C goji berries
1/2 C medjool dates
1 C almond meal
1/2 C coconut flour
1/3 C cup coconut oil (I like Botanica's brand because they're organic, monkey friendly, cold pressed, Fair Trade and hexane free! They're also packaged in a glass bottle meaning that there won't be any funky hormone disturbing xeno-estrogens leaking in to your expensive coconut oil).
1/2 tsp mineral salt
zest of 1 lemon (try to make sure this ingredient is organic)
3 tbsp Omegalicious Lemon Meringue OR 3 tbsp fresh lemon juice



Directions:

In your food processor, add goji berries and dates. Process on high for about 30 seconds. You want the dried fruit to be sticky, and thick.

Next, add in the almond meal, coconut flour and oil, salt, and lemon zest. Blend until mixed (or sometimes it just turns into a giant ball.... at that point you may stop...)

Add in the Omegalicious Lemon Meringue or the lemon juice, and it should become nice and smooth. It's still going to be very thick, and you want it that way!

With clean hands, get in there and play around! Form into balls any size that suit you and your family. This is a fun activity for kids to join in on too so get their little hands in the fun too! 

Keep refrigerated in an airtight container. 

Will keep for about a week.
