Paleo Chocolate Chip Cookies

These cookies are just the best. They're perfectly sweet, salty, chocolatey, and loaded with protein and healthy fats.


This was the first recipe I made with my very own homemade spiced vanilla extract! If you haven't made your own vanilla extract yet, do it.. It's so easy and is way better than store bought! All you ned are vanilla pods and some sort of alcohol. I used about 6-8 vanilla pods, sliced in half and gently peeled open and I just put them on a 26oz bottle of alcohol. Using vodka is most common but I prefer rum or even better, spiced rum. It's seriously amazing, trust me.

Anyways, I sometimes run off topic a little bit. I highly suggest you make your own vanilla extract but until then, here's a delicious cookie recipe.

Paleo Chocolate Chip Cookies

Ingredients:
2 1/2 C almond flour
3 tbsp coconut flour
1/4 C tapioca starch
1 tsp baking soda
1 tsp mineral salt
1/4 tsp cardamom powder
1/4 tsp cinnamon powder
2 eggs, whisked
2 tsp vanilla extract
1/2 C coconut oil, melted and cooled
1/2 C maple syrup (as dark as you can get)
1/2-1 C organic semisweet chocolate chips

Directions:
Preheat oven to 375° and line a baking sheet with parchment paper.

In a medium sized mixing bowl, combine almond flour, baking soda, and salt. In a small mixing bowl, add eggs, vanilla extract, coconut oil, and maple syrup whisk together.

Combine wet and dry ingredients and combine well. Fold in chocolate chips.

Using a cookie scoop or a tablespoon, scoop dough and drop onto a cookie sheet leaving about 2" of space in between each cookie (12 will fit on a standard cookie sheet).

Bake for 13-15 mins. Makes approximately 2 dozen.
