Bacon-Chip Cookies

I'm in a total bacon mood lately.

I don't eat meat everyday, but when I get the craving to eat meat, I listen to by body and gives it what it needs. Today I just happened to be craving chocolate and bacon. Then I found this recipe by the Primal Palate and followed the voices in my head that said "MAKE THIS NOW." I modified it slightly from the original recipe to suit what I wanted.

Bacon-Chip Cookies


Ingredients:

3 C almond flour
1 tsp baking soda
1 tsp salt
2 organic eggs
3/4 C pure maple syrup (Grade A, B, C or D- D is my favorite because it has a very rich flavour) 
1/2 C coconut oil (make sure it's either soft or melted)
1 tsp vanilla extract
1 C semisweet chocolate chips
6-8 pieces cooked bacon and made into bits

Directions:

Preheat oven to 375°

In medium bowl, combine almond flour, baking soda, and salt. 

In small mixing bowl, beat eggs, maple syrup, coconut oil and vanilla.

Combine wet and dry ingredients and mix together. Fold in chocolate chips and bacon


Drop about 1 tbsp of dough on a cookie sheet lined with parchment paper 


Bake for 15 minutes or until slightly crispy on the top. Let cool on wire rack.

Keep in airtight container for 4-5 days.

As I was taking 2 cookies off the cookie sheet they flew off the spatula and fell on the ground :(
I will not be known for wasting cookies, therefore I decided to pick through the pieces on the ground. Anyone remember that episode of Friends where Rachel and Chandler ate the cheesecake off the ground? Ya.. It was pretty much like that..
