Coconut Curry Soup

When eating this soup, expect to:

a. Feel happy and warm inside
b. Feel full for hours after eating thanks to the high fiber, protein and (healthy) fat content
c. Feel energized
d. Probably take a good poop because your body will be encouraged to detoxify
e. Feel like a champ because you just made a really awesome and nutritious meal for cheap (you know I'm looking at you college students)
f. Have your liver, heart, immune system and metabolism gently hug you from the inside and say "thank you" for the nourishing meal

Coconut Curry Soup


3 raw chicken breasts, skin removed, cut into small pieces
1 tbsp coconut oil
1 can coconut milk (full fat)
6 C chicken stock 
2 C chopped cauliflower
3 C carrots, diced
2 C celery, chopped
2 tbsp curry powder
1" knob of fresh ginger, grated (roughly 1 tbsp)
1" knob of fresh turmeric (roughly 1 tbsp) ** if fresh isn't available, sub for 1 tsp turmeric powder
1/4 C fresh cilantro, roughly chopped
3 cloves garlic, grated
salt to taste


Heat large sauce pan on medium heat. Add coconut oil and raw chicken.

When chicken is mostly cooked (the outsides white)

Add coconut milk, chicken stock, cauliflower, carrots and celery. 

Add in spices. 

Let simmer in sauce pan for about 35-45 minutes

Will keep in fridge about 4-5 days and makes approximately 6 servings
