Grainless Banana Bread


Today I decided to make grain and sugar free banana bread. Assuming that I've posted recipes for the previous banana breads I've made in my kitchen, I headed to my blog to look up old recipes.

To much disappointment, I didn't find ANY banana bread recipes.

My lazy ass hasn't posted ANY of the recipes I've made! How rude! Let me just tell you from the bottom of my heart that I'm sorry.

Anyways. Here's the FIRST of a handful of banana bread recipes I've made in the past and I'll be sure to post the other recipes soon too. Pinky promise.

Grainless Banana Bread


Ingredients:

3 large very ripe bananas, mashed
1 tbsp maple syrup
1 tsp vanilla ext
1/4 almond butter (mine was raw that I made in my vitamix, but toasted will work perfectly)
2 tbsp coconut oil, softened
2 eggs
1/2 C coconut flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp mineral salt
1/2 C semi sweet chocolate chips (mine are fair trade dark chocolate)

Directions:

Preheat oven to 350°. Grease loaf pan (8x4 or 9x5") with coconut oil. 

In a bowl, combine bananas, maple syrup, vanilla, almond butter, coconut oil and eggs. Mix until smooth with an electric mixer. On low speed, add in coconut flour, baking soda & powder, cinnamon and salt. Mix again until well combined. Gently stir in chocolate chips.

Pour batter in pan and bake 35-40 mins or until a knife or toothpick is inserted and comes out clean. Let cool complete before digging in (I know this sucks and I'm sorry. You have to do it or it will crumble everywhere if it's still hot)

Cut into slices and enjoy with some butter (or coconut butter for those with dairy sensitivities)
