Sweet Potato Chocolate Chip Cookies

These 6 ingredient cookies will make you happy. They're super easy to make and I legit couldn't stop eating the cookie dough. In all honesty I probably ate about 3 cookies worth of cookie dough and i regret nothing.

Sweet Potato Chocolate Chip Cookies

I'm aware that these don't look the most appetizing however I assure you they taste great. The cookies hold a lot of moisture so as you can see, they're a bit sticky.
Dairy-free, gluten-free, primal, paleo (if you use an alternative nut butter) and have no refined sugar added. 


1 C sweet potato puree (approximately 1 small sweet potato)
1/2 C smooth peanut butter (or any nut butter)** No sugar added! The ingredients should only be nuts. Don't buy that Kraft crap which is full of sugar and hydrogenated oils
1 egg, whisked
1 tbsp maple syrup
pinch of salt
1/3-1/2 C semi sweet chocolate chips


Preheat oven to 350°

Combine all ingredients minus chocolate chips and mix well

Fold in chocolate chips

Chill in refrigerator for 10 minutes.

Scoop dough onto cookie sheet lined with parchment paper. The dough will be really sticky and hard to form into balls. Just plop them onto the cookie sheet and press down slightly so it can be fully through

Bake for 10 minutes and transfer to a cooling rack. Store in air tight container in the fridge
