Cauliflower Tacos with Lime Avocado Crema

Everyday is a great day for tacos.
Tacos sustain life. Tacos create love. Tacos sing to my heart.

Vegetarian tacos are just as good at meat tacos and cauliflower is amazing so it just made sense to make cauliflower tacos, am I right? I'm totally right.

Cauliflower Tacos with Lime Avocado Crema

Cauliflower taco filling:
1 tbsp coconut oil
1/2 red onion
2 1/2 tbsp taco seasoning (try to buy organic, non-irradiated, and contains no MSG)
1/4 C coconut milk
1 head cauliflower, cut into bite sized pieces
2 cloves garlic

1/2 small red cabbage, finely chopped
4 tbsp fresh lime juice
1/4 red onion, minced
1/4 C fresh cilantro, finely chopped

Lime avocado crema:
3/4 C plain greek yogurt
1 avocado
2 tbsp fresh lime juice
1/4 C cilantro, finely chopped

**to make this recipe vegan and fully paleo, exclude the greek yogurt and use 2 avocados instead of 1.

Heat a frying pan over medium heat. Sauté onion in coconut oil until transparent. Add cauliflower and garlic to pan. Mix coconut milk and taco seasoning and pour over top and mix well. Cook until cauliflower is soft (10-15 minutes), giving it a quick stir every few minutes.

Combine the slaw ingredients and toss together in a large bowl.

In a food processor, combine all ingredients for the crema and process until avocado is no longer chunky.

Now it's time to make your taco!!

Place slaw and taco filling on tortillas (click here for grain free tortilla recipe) and top with crema.

Enjoy! Don't make life regrets by stuffing your taco too much like I do!
