Cauliflower Tacos with Lime Avocado Crema

Everyday is a great day for tacos.
Tacos sustain life. Tacos create love. Tacos sing to my heart.

Vegetarian tacos are just as good at meat tacos and cauliflower is amazing so it just made sense to make cauliflower tacos, am I right? I'm totally right.

Cauliflower Tacos with Lime Avocado Crema 



Ingredients:

Cauliflower taco filling:
1 tbsp olive oil
1/2 red onion
2 1/2 tbsp taco seasoning (try to buy organic, non-irradiated, and contains no MSG)
1/4 C coconut milk
1 head cauliflower, cut into bite sized pieces
2 cloves garlic

Slaw:
1/2 small red cabbage, finely chopped
2 C thinly sliced black kale, stems removed
4 tbsp fresh lime juice
1/4 red onion, minced
1/4 C fresh cilantro, finely chopped
Salt to taste 

Avocado crema:
3/4 C plain greek yogurt
1 avocado
2 tbsp fresh lime juice
1/4 C cilantro, finely chopped

**to make this recipe vegan and fully paleo, exclude the greek yogurt and use 2 avocados instead of 1 

Directions:

Heat oil in frying pan over medium heat. Sauté onion until transparent (about 5-7 minutes).
Add cauliflower and garlic to pan, then mix coconut milk and taco seasoning into the pan. Cook until cauliflower is soft (10-15 minutes), giving it a quick stir every few minutes.

While the cauliflower is cooking, combine the slaw ingredients and toss together in a large bowl. Let ingredients marinate for at least 5-10 minutes. 

In a food processor, combine all ingredients for the crema and process until avocado is no longer chunky. 

Now it's time to assemble your taco!!

Place slaw and taco filling on tortillas (click here for grain free tortilla recipe) and top with crema (add chopped cherry tomatoes for the “cherry on top” of this taco haha)

House tip: Don't make life regrets by stuffing your taco too much like I do.
