Grain Free Tortillas

I adapted this recipe from Juli Bauer's paleo cookbook and I totally love it!

They don't taste eggy, they're grain and gluten free, easy to make and I'm confident that they will be loved by everyone.

Grain Free Tortillas


2 organic eggs
1 cup coconut milk (canned)
1 tbsp melted butter (use coconut oil to make dairy free)
1/2 C arrowroot starch
3 tbsp coconut flour 
1/2 tsp mineral salt
coconut oil for pan


Preheat oven to 400° and line baking sheet with parchment paper

Mix together eggs, coconut milk and butter

In a separate bowl, mix arrowroot starch, coconut flour and salt

Pour wet ingredients into dry, and mix well until no clumps remain

Heat non-stick pan over medium heat and melt 1 tsp coconut oil. Using a ladle, pour batter (about 1/4 C) onto into 5-6" tortillas. Cook about 1 minute per side. Repeat until batter is gone. 

Place tortillas on baking sheet and bake 7 minutes until slightly firm.

Makes about 10 tortillas
