Pizza Soup

Pizza is the bomb.

Two of my favourite things about pizza:
1. You can eat it out of the box at 2am while you're sitting on the floor drunk
2. It's one of the best leftovers ever.. EVER.

You know when you first get the pizza out of the oven and you're fully aware it's going to be super hot (duh, it JUST got out of the oven) but you bite into it anyways and burn the roof of your mouth and keep eating it through the pain? That is because of your true love and dedication towards pizza.. keep it up, champ. (come to think about it, I did that with this soup)


I saw a recipe for pizza soup a few months back and my eyes grew to the size of my head and were probably in the shape of hearts. Pizza soup shot to the top of my "things to cook" bucket list and I was dying to try it out. Needless to say, I'm happy I did!

Pizza Soup


1 lb italian sausage
1 medium yellow onion, minced
4 cloves garlic, minced
2 C mushrooms, diced
1 red bell pepper, diced
1 946ml can diced tomatoes (you can use fresh tomatoes if you prefer, using about 8 diced tomatoes. If you're using a can, look for organic tomatoes in a BPA free can)
1 C pizza sauce (look for brands that don't have lots of added sugar and preservatives)
3 C organic beef broth
2 tbsp fresh basil, minced
pepper to taste
croutons (preferably homemade or gluten free)
sliced organic mozzarella cheese


In a large sauce pan, cook sausage, onion, and garlic until sausage is almost fully cooked. When there is only a little bit of pink left in the meat, add mushrooms and bell pepper. Cook until meat is fully cooked.

Add diced tomotoes, pizza sauce, broth and basil. Bring to low boil and let simmer of low heat for about 35-45 minutes. 

Preheat oven to 450° on broil

Ladle soup into onion soup bowl (or any broil safe bowl). Add a handful of croutons to the soup and place cheese sliced on top. Broil until cheese is slightly brown, about 2-5 minutes. 

This recipe will provide you with about 8 bowls of deliciousness!
