Raspberry Vinaigrette

Raspberry vinaigrette is my favourite salad dressing because it's refreshing, flavourful, and so easy to make!

Raspberries are my favourite berry (after I wrote that I had to think really hard about the statement I just made and ask myself if I was being honest. Are raspberries or blueberries are favourite?? It was a damn close call but after 30 seconds of staring blankly at my computer screen I came to the conclusion that indeed, raspberries are my favourite. Blueberries are my runner up).

Raspberries are high in antioxidants and phytonutrients. These are useful in preventing free radical damage to DNA, thus protecting cells from cancerous cells, macular degeneration, and premature aging.

This recipe also has apple cider vinegar, which is very alkalizing and has healthy bacteria in it that helps repopulate the intestine with good bacteria.

Of course I'm not saying this vinaigrette will prevent all these nasty things and totally change your digestive system, but eating something delicious and healthful is a great start!



Raspberry Vinaigrette

Ingredients:

1 pint fresh raspberries 
2 1/2 tbsp balsamic vinegar 
1 tbsp apple cider vinegar 
1 tsp grain mustard 
1 tbsp dijon mustard
1/3 C olive oil (can also use flax or avocado oil!)
pinch of salt and pepper

Directions:

Clean raspberries and all ingredients to blender. Process until smooth.

Yup, that's pretty much it.. Use in your favourite salad and enjoy on a beautiful sunny day!

Store in an airtight container in the fridge for up to one week.
