Dairy Free Eggnog with Collagen

For my first festive recipe, I wanted to share a recipe for the best holiday drink ever.

What's that?
Eggnog. duh.


Eggnog is the best.
It's something I look forward to every Christmas season.
Doesn't every one?

Christmas is the most wonderful time of the year.
I love giving, and I love watching others give.
I love how warm my heart gets when I'm surrounded by my family and friends.
I especially love making homemade gifts. I spend a lot of time and energy thinking of what I should make, then when I turn that idea into a creative gift and give out my little handmade holiday gift bag to people makes me soooo happy.

Side note: If you don't know me personally, I should tell you that I'm an old soul. I'm basically a grandma in a 25 year olds body and I'm totally okay with that. I was in sewing class in high school and I learned to knit when I was 11. I've always loved doing homemade gifts, and it's for sure something I'll continue to do until I'm old and die haha

I love making recipes that I can enjoy during the season, and not make you feel like shit after.
All while not making me feel like I'm missing out on the good stuff! 
That's why home baking for me is so much fun. This recipe is seriously on par with the eggnog you buy in the stores and the best part is it's not filled with refined sugar and preservatives.  When I first went dairy free, I was so sad to lose my eggnog.



I have the tendency to go overboard on goodies during the holidays. But continuing to focus on your health is very important during Christmas time. I'm not here to tell you to avoid all the yummy treats out there, or to miss out on all the delicious cookies, but I am here to tell you that maintaining a proper nutritional regimen is important as hell during the holidays. Continuing to take your supplements regularly, your probiotic or enzymes, green juices, etc, is especially critical during the busy festive season.

I focus on my gut health DAILY. 
No matter where I am or what I'm doing. 
When I was in Africa I took probiotics everyday.
When I was in Europe, I took a daily gentle bowel cleanser so I didn't get constipated.
Gut health super duper important guys. 

I take collagen daily because it helps slow down visible signs of aging, but most importantly helps to repair the intestinal lining in the gut. Because of the amino acids in collagen that builds the tissue the lines the colon and gastrointestinal tract, supplementing with collagen can help people with leaky gut syndrome, food sensitivities or allergies, IBS, acid reflux, crohns or ulcerative colitis. In addition to helping with leaky gut, collagen also helps with the absorption of water within the intestines, which helps for a smooth move. 

If you don't have collagen powder, it's totally fine to make the eggnog without it because it won't alter the flavour whatsoever. It just adds a little nutritional boost.

I hope you all love eggnog as much as I do and hopefully you'll even go as far as making it for your holiday gathering! I promise it will surprise everyone that it's dairy free. If you've ever want to try a healthier version of eggnog, this recipe is totally for you. 

Ingredients:

4 egg yolks
1 can coconut milk (can be full fat or lite-I used full fat)
3 C cashew milk (or almond milk)
1/4 C coconut sugar
2 tsp vanilla extract
1 tsp nutmeg
1 tsp ceylon cinnamon*
pinch allspice
1/4 C collagen powder**

*Ceylon cinnamon helps regulate blood glucose levels. Can use regular cinnamon 
**Optional

Directions:

In a large sauce pan, whisk all the ingredients except the egg yolks together. Gently heat for a few minutes over medium. Be careful to not bring to a boil or simmer.

In a small bowl, whisk together the egg yolks. 

Temper the eggs by slowly adding a little bit of the warmed milk into the eggs and whisk. Add a little more, then a little bit more. 

Finally, add the tempered egg yolks back into the saucepan and whisk one last time. 

Store in sealed container in fridge for 3-4 days.
