Savoury 15 Minute Baked Brie
Cheese is a crowd pleaser. Something about cheese can totally turn your day around. You could be having a mediocre-at-best day and then someone offers you some melted cheese and DAMN all of a sudden your day ain't so bad anymore now is it. Is it completely inappropriate to say cheese could act as an anti-depressant? Yes. It absolutely is inappropriate. Buuuuuuuut, eating certain foods can make you happy and boost serotonin levels.. so am I really that far off?
Anyways, this is a great appetizer to serve over the holidays. It's easy to make, it's super flavourful and it takes literally 15 minutes to make. So the next time you're busy getting your house prepared for hosting over the holidays or stressing out that you haven't made enough food but you just don't have enough time on your hands.. You totally need to make this baked brie!
1 190g wheel of brie (around 6oz)
1 garlic clove, sliced into thin slivers
thyme leaves from 2 sprigs
1 tbsp truffle oil or olive oil
fresh cracker black pepper
Preheat oven to 375°
With a sharp knife, gently slice the rind on top side of the brie making a crosshatch pattern. Be extra careful not the slice all the way through. Put the brie in a round oven safe dish lined with parchment paper or an oven safe dish you plan on serving the brie in (I used a small cast iron pan). Insert the garlic slivers into the cuts of the brie, and drizzle truffle oil on top. Sprinkle on the thyme leaves and bake for 12-14 minutes until it appears gooey.
Finish with freshly cracked pepper and allow to cool for a few minutes before serving with crostinis or crackers, a ramekin of honey or fig jam, pesto and garlic confit!
