Chocolate Cherry Chia Mousse

Nourish yourself with this chocolate cherry chia seed mousse takes 5-10 minutes to whip up in the blender. It is seriously filling thanks to all the healthy fibre from the chia and hemp seeds. In addition to the anti-inflammatory fats from the seeds, coconut milk provides medium chain triglycerides for sustained energy and cognitive function.

Ingredients:
3 C  frozen cherries
1 can coconut milk
1/3 C maple syrup
1 tsp vanilla ext
1 tsp almond ext
1/8 tsp mineral salt
3/4 C chia seeds
1/2 C hemp seeds
2/3 C oat milk
1/4 C cocoa powder

Directions:

Combine 2 C cherries and along with the remaining ingredients in a high speed blender. Blend on high speed for 30 seconds to 1 minute or until all ingredients are smooth. 
Portion into 4 250ml mason jars.

Cut the remaining cherries into quarters and garnish the mousse. Seal tightly and store in the fridge up to 5 days.
